Coconut Drop Cookies: -
Ingredients required are 1 1/2 cups of flaked coconut, 1/8-teaspoon salt, 2 egg whites, 1-teaspoon vanilla extract, 1 cup of Splenda. Prepare the oven by pre-heating it to 350 degrees F. Grease 2 cookie sheets and keep aside. Mix the egg whites and salt and batter until it forms a smooth consistency.
Add the Splenda gradually while beating the egg whites continuously until stiff peaks form. Mix the other ingredients by hand and drop by teaspoonfuls, 2 inches apart onto the prepared cookie sheets. Bake the cookies for at least 12-15 minutes until it turns light brown. Let it cool on the cookie sheet for 1 min and serve. Chocolate- Coconut Drop Cookies: -
Ingredients required are 1/2 c. butter, 3 c. quick oatmeal, 1 c. coconut, 2 c. sugar, 1 tsp. Vanilla, 1/2 c. milk and 6 tsp. Cocoa. Mix butter, sugar, milk and vanilla in a pan and boil for a minimum of 1 minute. Mix oatmeal, coconut and cocoa in another container. Combine both the mixtures and batter to form a smooth consistency. Mix the other ingredients by hand and drop by teaspoonfuls, 2 inches apart onto the prepared cookie sheets. Let it cool.
