Christmas Molasses Cookies

After a whole days shopping for Christmas trims and showers, you are way too stressed out to prepare cookies and candies. This is the usual and routine pre-Christmas situation for most working mothers. If your situation is somewhat similar, we have a solution for you. Opt for the Christmas Molasses Cookies.They are the ideal last minute cookies that are extremely timesaving and by far the easiest to implement. If you are among those who feign at the very prospect of preparing these very delicious and yummy treats at home we can assure you that they are not all that difficult to prepare as you are thinking them to be. Prepare them at home and garnish and personalize them according to your own tastes and preferences. All you require to get this great job done are 2/3 c Packed brown sugar, 2 Eggs, 2/3 c Shortening, 5 1/2 c All-purpose flour, 1 1/3 c Molasses, 2 ts Ground ginger, 4 ts Ground cinnamon, 1 ts Salt and 2 ts Baking soda.

Mix the brown sugar, shortening and molasses together in a bowl. Stir the remaining ingredients before covering and refrigerating it for at least an hour. Prepare the oven by heating it to 375 degrees. Roll the dough 1/2" thick on a lightly floured cloth covered board and then cut into desired shapes with cookie cutters. Place them about 1" apart on a lightly greased cookie sheet and bake them for 7 to 8 minutes till it becomes crisp. Let it cool. You could frost it and use embellishments according to your preferences. This arrangement yields 5- dozen 3" cookies.
