Easy to prepare and fun to implement, they add a dash of warmth to any party or occasion. Ingredients required to prepare Christmas Peanut Cookies are 2 cups peanut butter, 3 cups rice cereal, 1/2 cup butter, 1 cup semisweet chocolate chips, 1 pound confectioners' sugar (about 4 1/4 cups sifted) and 1 cup butterscotch chips.
Melt the peanut butter with butter in a saucepan. Mix the confectioners' sugar and cereal thoroughly and batter. Add the hot peanut butter mixture into the cereal mixture. When the mixture thoroughly blends, shape into 1/2-inch balls. Chill it. Melt butterscotch and chocolate chips in separate pans and then dip half of the candies in chocolate, and the other half in the melted butterscotch respectively. Swirl the tops of the cookies with the back of a spoon before placing it on the waxed paper-lined cookie sheet. Chill first and then serve. This arrangement yields about 8- dozen peanut butter candies.
