- Chocolate Fudge Recipe:
Ingredients:
- Unsweetened chocolate: 2 squares (chopped)
- Vanilla extract: 1 teaspoon
- Unsalted butter: 2 tablespoons cut into pieces
- Light corn syrup: 2 tablespoons
- Half-and-half cream: 2/3 cup
- White sugar: 2 cups (granulated)
- Salt: 1/8 teaspoon
Directions:
1. Grease the bottom of a medium pan with 1 tablespoon of unsalted butter and keep it aside. In a saucepan mix the sugar, light-corn syrup, chocolate, and half-and-half and cook over medium heat until it comes to boil.
2. Turn off the heat and cover the pan for 2-3minutes so that the mixture settles down in the pan and the sugar crystals dissolves fully. Take off the lid of the pan and fix a candy thermometer onto the side of the pan without touching the bottom. Boil the mixture until the temperature reaches 236 degree. Avoid stirring or shaking the saucepan while boiling.
3. Turn off the heat and add 2-tablespoon butter on top of the fudge, do not mix the butter onto the fudge. Remove the thermometer and let the fudge cool down. Add the salt and vanilla extract to the fudge and beat it until creamy. Pour the fudge in a flat dish and let it cool before cutting it to pieces.
- Peanut Brittle
Ingredients:
- Vanilla extract: 1 teaspoon
- Light corn syrup: 1 cup
- Baking soda: 1 tablespoon
- Raw peanuts: 2 cups
- Unsalted butter: 1 tablespoon
- White granulated sugar: 2 cups
- Salt: 1/8 teaspoon
- Water: 1/2 cup
Directions:
1. Take two cookie sheets grease them with butter and set it aside. Put the baking soda, vanilla extract and butter in ascending order in a small cup and keep it aside.
2. Heat a medium sized pan over medium flame and boil the corn syrup, peanuts, and salt in water stirring continuously with a wooden spoon. Turn off the heat and cover the pan for a minute. Let the mixture settle down in the pan.
3. Now, place a candy thermometer at the side of the pan without touching the bottom. Stir gently without shaking the pan so that the peanuts does not stick too the pan. Bring to boil and simmer until the thermometer reaches 296 degrees.
4. Turn off the heat and ass the baking soda, vanilla extract, and brittle on to the mixture stirring for about 30 seconds. Now pour half of the mix over the buttered cookie sheets. Let it cool down and then break it into pieces. Store it in an airtight container or a freezer bag and serve your guests with peanut candies.
