  • Dark Christmas Fruitcake

Ingredients:

  • Flour: 2 cups
  • Orange juice: 1/4 cup
  • Candied pineapple: 1 cup
  • Candied mixed fruit: 1 cup (diced)
  • Pecan halves: 1 cup
  • Almonds: 1 cup (thinly sliced)
  • Unsweetened baking chocolate: 1/2 square (melted)
  • Cinnamon: 1 1/2 teaspoon
  • Baking soda: 1/2 teaspoon
  • Lemon juice: 1/4 cup
  • Raisins: 4 cups
  • Brown sugar: 1 cup
  • Vegetable shortening: 1 cup
  • Nutmeg: 1 teaspoon
  • Ground cloves: 1 1/2 teaspoon
  • Candied cherries: 1 cup (halved)
  • Eggs: 6

Directions:

1. Grease a 4 inch x 10 inch tube cake pan and cover the bottom of the pan with aluminum foil. You can also use 2 large loaf pans or 3 medium loaf pans for the purpose. Spray nonstick cooking spray on the pans and keep them aside.

2. Mix the fruits and nuts in a large bowl and add 1 cup of flour to the mix. Stir well. Beat the shortening and the sugar in another large bowl at a medium speed until fluffy and light. Add the egg yolks one at a time and beat well after adding each egg to the mix.

3. Now, add the flour mixture and the fruit juice to the mix and stir well. Take another bowl and beat the egg whites in it until stiff. Now, fold the beaten egg whites into the batter and add the fruit and nut mixture to it. Mix the ingredients using your hand until they blends properly.

4. Pour the batter into the prepared greasing pan and bake at a heated oven at 300 degrees for 2 hours and 20 minutes if in a tube cake pan. Bake the cake for 1hour and 45minutes if in a large pan and for 1 hour in a small pan. Let the cake cool off completely in the pan. Remove from the pan and wrap well. Your fruitcake is ready to serve.

  • Mini-Fruitcakes

Ingredients:

  • Corn flake crumbs: 2 cups
  • Sweetened condensed milk: 1 can
  • Mixed candied fruit: 2 cups
  • Chopped nuts: 1 cup
  • Nonesuch® mince meat: 1 jar (28oz.)
  • Flour: 2 1/2 cups
  • Eggs: 2 (Lightly beaten)
  • Candied cherries: 36
  • Baking soda: 1 teaspoon

Directions:

1. Mix all the ingredients in a bowl excepting the cherries. Cover 3 cupcake pans with paper liners and pour the batter into each pan.

2. Bake the batter at 300 degrees for about 45 to 50 minutes. Take out from the oven and top each cake pan with candied red cherry and 2 slices of a green candied cherry.

Directions:

For The Sauce:

1. Mix the apricot preserves, honey mustard, and cranberry sauce in a medium saucepan.

2. Boil the sauce mix over medium heat until the preserves melts and the sauce gets thick and smooth. Stir occasionally.

3. Turn off the heat and keep it aside.

For the Ham:

1. Heat the oven to 325 degrees. Take a shallow roasting pan put the ham over it and place it in the middle of the oven.

2. Bake the ham for around 1 hour or until the thermometer reaches the temperature of 140 degrees.

3. Dredge the ham with the glaze during the last 45 minutes of baking. Take it out from the oven and serve.

  • Cranberry Salad

Ingredients:

  • Cranberries: 4 cups
  • Apple: 1 (diced)
  • Orange: 1
  • Lemon gelatin: 2 packages
  • Sugar: 1-1/2 cups
  • Warm water: 4 cups

Directions:

1. Break the cranberries, apple, and orange including the rind into pieces.

2. Mix the cranberries and sugar in a bowl and keep it aside. In another bowl, dissolve the gelatin in warm water

3. Now, add the Cranberry mixture and the orange and apple into the gelatin. Stir continuously until it blends properly. Pour into moulds when done and serve.

  • Honey: 1-1/2 cups
  • Butter: 2/3 cup

  • Brown sugar: 1/3 cup
  • White pepper: 1/8 tsp
  • Ground cardamom: 1/8 tsp

Directions:

1. Heat the oven to 325 degrees. Now, cover a roasting pan with foil and place the ham in it. Cut the ham in shapes of diamond and fix the whole cloves in it in intersection.

2. Mix the cardamom, butter, corn syrup, honey, orange juice, brown sugar, and pepper in a bowl. Take a double boiler and place the mix in the top half of the boiler and heat until the butter melts and mixture blends properly. 4. Remove the ham from the oven after done and let it settle for 10 minutes before serving. Drizzle the pan juices on the side of each ham slice.

Ingredients:

  • Potatoes: 8 (peeled and cut into 1/8″ slices)
  • Parmesan cheese: 1/3 cup (grated)
  • Butter: 3 tablespoon
  • Heavy whipping cream: 2-1/2 cups
  • Garlic: 3 cloves (minced)
  • Dijon mustard: 3 tablespoon
  • Salt and white pepper to taste

Directions:

1. Take a 9×13 inch glass-baking dish and layer the sliced potatoes on it. Sprinkle salt and white pepper over it. Mix the mustard, butter, garlic, and cream in a saucepan and heat it to the point of boiling. Pour the potatoes over it.

2. Cover the saucepan and bake the dish for about an hour in 350 degrees. When it is done, take it out from the oven and spread parmesan cheese over it. Bake for another 30 minutes until the cheese melts a bit or turns golden brown and potatoes are soft. Take out from the oven and serve it hot.

  • Graham Cracker Crust: 1
  • Large Candy Canes: 4 (crushed)
  • Small Bag Miniature Marshmallows: ½
  • Frozen Whipped Topping: 1 – 8-oz Container (thawed)

Directions:

1. Mix the marshmallows, 3/4th of the crushed candy along with the whipped topping and stir well.

Ingredients:

  • Breadcrumbs: ½ lb
  • Plain Flour: ½ lb

  • Butter: 1 lb

  • Sultanas: 1 lb
  • Currants: 1 lb

Directions:

1. Mix butter and sugar to form a cream and add the eggs to it. Stir well and add the brandy.

Ingredients:

  • Flour: 1 ½ cups
  • Baking Powder: ½ teaspoon
  • Vanilla Instant Pudding: 1 package
  • Butter: 2 tablespoon
  • Milk: 2 cups

  • Sugar: 1 tbsp
  • Cherry Pie Filling: 1 Can
  • Eggs: 2
  • Salt: ½ teaspoon

Direction:

1. Prepare vanilla pudding as per the directions on package and store it in the refrigerator for at least 30 minutes.

2. Mix the dry ingredients in a bowl with a fork and add the milk, egg, butter and vanilla while stirring continuously to the mix. Beat well until the batter is smooth.

  • All-purpose flour: 5-1/4 cups

  • Butter: 1/4 cup (melted and cooled)
  • Cold butter: 1 cup (cut into small pieces)
  • Egg: 1
  • Egg: 1 (beaten with 1 tablespoon water)
  • Salt: 1-1/2 teaspoons

Method:

1. Mix yeast and sugar in warm water and stir well so that it dissolves. Add milk, salt, egg and 1 cup of flour and stir until smooth. Now, beat in melted butter to the mix.

2. Cut butter into 4 cups of flour until crumbly. Add the yeast mixture to the flour mixture and gently fold until blend well. Cover bowl with plastic wrap and refrigerate for at least 4 hours.

3. Knead dough on a floured surface roll into a ball. Cut the dough evenly into 4 parts. Take one ball of dough at a time and keep the rest in wrapped in plastic in the refrigerator.

4. Knead one ball of dough into a circle about 16 inches in diameter on a floured surface. Slice the circle into 8 equal wedges and roll them gently toward the pointed end and shape each into a crescent shape.

5. Place each croissant on a non-greased baking sheet at least 1-1/2 inches apart from each other. Cover the dough with a towel and let it rise in a cool place for about 2 hours.

6. Preheat oven to 325 degrees and after the croissants have doubled in size brush them with the mixture of egg and water. Bake for about 35 minutes or until golden. Serve the croissants warm with jam or flavored butter.

  • Sweet Croissants

Ingredients:

  • Croissant dough: 1 package (refrigerated)
  • Raisins: 3 tablespoons (chopped)
  • Butter: 2 tablespoons (melted)
  • Cinnamon: 1/2 teaspoon
  • Honey or corn syrup
  • Brown sugar: 2 tablespoons
  • Nuts: 3 tablespoons (chopped)
  • Graham wafers: 2 (crushed)

Method:

1. Muddle nuts, raisins, cinnamon, brown sugar, wafers, and butter together and add to the mix few drops of honey. Stir well until it forms a thick mixture.

2. Now, take out the croissant dough and separate them into triangles. Stuff some portion of the mixture into the wide end of each triangle and roll them up.

  • Light brown sugar: 1/3 cup (packed)
  • Milk: 2 tablespoons
  • Vanilla: 1 teaspoon
  • Baking soda: 1 teaspoon
  • Egg: 1
  • Salt: 1/2 teaspoon

Directions:

1. Preheat oven to 375F. Whish the peanut utter and shortening in a bowl until properly blended. Add brown sugar and 1/3rd cup of granulated sugar to the mix and beat until fluffy.

2. Now, add the milk, vanilla, and egg to the mix and beat well. Add the flour, baking soda, and salt to the mixture and stir well. Now, slowly add the peanut butter mixture to it.

3. Shape dough into 1-inch ball and roll in the remaining granulated sugar. Place them on a non-greased cookie sheet, Bake for 8 to 10 minutes or until brown. Place the kiss on each cookie top; press it hard so that it breaks the cookie edge. Remove from the cookie sheet and place it on a wire rack. Let it cool off completely and serve.

Ingredients:

  • Macaroon coconut: 1/2 lb
  • Powdered sugar: 1/2 lb
  • Egg whites: 3
  • Lemon juice: 1 teaspoon
  • Cinnamon: 1/2 teaspoon

Directions:

1. Mix the egg whites, lemon juice, and salt in a bowl and beat well. Now, slowly add the cinnamon and sifted powdered sugar into the mix, and whip it up.

Ingredients:

  • Unsweetened chocolate: 2 squares (chopped)
  • Vanilla extract: 1 teaspoon
  • Unsalted butter: 2 tablespoons cut into pieces
  • Light corn syrup: 2 tablespoons
  • Half-and-half cream: 2/3 cup
  • White sugar: 2 cups (granulated)
  • Salt: 1/8 teaspoon

Directions:

1. Grease the bottom of a medium pan with 1 tablespoon of unsalted butter and keep it aside. In a saucepan mix the sugar, light-corn syrup, chocolate, and half-and-half and cook over medium heat until it comes to boil.

2. Turn off the heat and cover the pan for 2-3minutes so that the mixture settles down in the pan and the sugar crystals dissolves fully. Take off the lid of the pan and fix a candy thermometer onto the side of the pan without touching the bottom. Boil the mixture until the temperature reaches 236 degree. Avoid stirring or shaking the saucepan while boiling.

3. Turn off the heat and add 2-tablespoon butter on top of the fudge, do not mix the butter onto the fudge. Remove the thermometer and let the fudge cool down. Add the salt and vanilla extract to the fudge and beat it until creamy. Pour the fudge in a flat dish and let it cool before cutting it to pieces.

  • Peanut Brittle

Ingredients:

  • Vanilla extract: 1 teaspoon
  • Light corn syrup: 1 cup
  • Baking soda: 1 tablespoon
  • Raw peanuts: 2 cups
  • Unsalted butter: 1 tablespoon
  • White granulated sugar: 2 cups
  • Salt: 1/8 teaspoon
  • Water: 1/2 cup

Directions:

1. Take two cookie sheets grease them with butter and set it aside. Put the baking soda, vanilla extract and butter in ascending order in a small cup and keep it aside.

2. Heat a medium sized pan over medium flame and boil the corn syrup, peanuts, and salt in water stirring continuously with a wooden spoon. Turn off the heat and cover the pan for a minute. Let the mixture settle down in the pan.

3. Now, place a candy thermometer at the side of the pan without touching the bottom. Stir gently without shaking the pan so that the peanuts does not stick too the pan. Bring to boil and simmer until the thermometer reaches 296 degrees.

4. Turn off the heat and ass the baking soda, vanilla extract, and brittle on to the mixture stirring for about 30 seconds. Now pour half of the mix over the buttered cookie sheets. Let it cool down and then break it into pieces. Store it in an airtight container or a freezer bag and serve your guests with peanut candies.
